Here's a recipe for "Cuban Coffee" using the Bialetti Moka pot. I use Bustelo Supreme espresso grind, but Illy, or Lavazza or other good espresso grinds will do. Fill the bottom with water, take some care to get the water level precisely below the bottom of the filter insert. Fill with coffee, compact the grounds a bit for a firm fill. Screw together and onto the (gas) stove for 4 minutes at high heat, with the top up. At four minutes or so, the water boils and the brewing starts. Take the first 3/4 teaspoon and mix it with two teaspoons of sugar in a pyrex or similar measuring cup. Back on the stove, turn the heat to low, and put the top down, the idea is to have a very slow brew; it takes another 4 minutes to fully brew. While the coffee brews, beat the sugar and coffee in the pyrex measuring cup, you'll notice that the sugar gets creamy and turns "white" as you beat it more and more. Pour the coffee over the sugar, mix, enjoy. You'll have a nice coffee with a sweet creama on top.
