1-1/2 cups cake flour
2-1/2 tablespoons baking powder
3 tablespoons malt powder
1/2 teaspoon kosher salt
3 large eggs separated
1/4 cup unsalted butter melted
1-1/2 cups whole milk

Step One: Preheat Waffle Iron
Spray the waffle iron with cooking spray and preheat according to its instructions.
Step Two: Sift Ingredients
Triple sift flour, baking powder, malt, and salt with the mesh strainer into a large bowl. Set aside.
Step Three: Separate Eggs
Separate the egg whites from the egg yolks. Place the egg yolks into a medium bowl and the egg whites into a small bowl.
Step Four: Combine Egg Yolks, Milk and Butter
In the medium bowl, whisk together egg yolks, melted butter, and milk until fully combined.
Step Five: Add Egg Yolk Mixture to Flour Mixture
Add the egg yolk mixture to the flour mixture and stir briefly. It is alright if there are some lumps in the mixture.
Step Six: Add Egg Whites
Whip the egg whites until they are stiff. Add the egg whites to the mixture and fold together until fully combined. Add batter to waffle iron and cook.
