Homemade Lemon Cordial
2 cups (500ml or 17fl oz) fresh lemon juice
1 2/3 cups (330g or 11 1/2oz) white or raw sugar
1 2/3 cups (400ml or 13 1/2fl oz) water

Yield: Makes 500ml
Homemade lemon cordial three ways including lemon, cardamom and ginger. Easy to make and tasty!
Strain the lemon juice and add to a medium saucepan along with the sugar and water. Stir over a medium heat until the sugar has dissolved. Bring to the boil. Reduce the heat and simmer uncovered for 20-25 mins, stirring occasionally. Allow to cool and then pour into sterilised bottles.
Serve: pour the syrup into a glass (approx 1/4) and top with either still water or soda/mineral water
Store in the fridge for up to a month. The syrup can be frozen but make sure you use plastic bottles. For something a bit extra, garnish with mint leaves.
Notes
Variations: Ginger: Add a 4cm peeled and sliced piece of ginger to the saucepan with the other ingredients. Strain out when bottling. Cardamom: Add 10 bruised cardamom pods to the saucepan with the other ingredients. Strain out when bottling.
