Mexican Street Corn (Elote) Salad

1/4 cup mayonnaise
1 clove garlic, minced
2 tbs. lime juice
1 tbs. olive oil
2 cups fire-roasted sweet corn
2 green onions chopped
1/4 cup chopped onion (red or white)
1 tbs. finely chopped jalapeno
1/2 cup cotija cheese
chili poweder to taste

Mix mayo, garlic, and lime juice. Add olive oil to a hot skillet. Add corn to skillet - cook until hot. Add onions and pepper - cook for another minute. Add the sauce ingredients you mixed earlier - cook for a couple of minutes. Add the cheese - once melted, serve immediately.
