Salted Caramel

1/4 Water
1 cup sugar
3/4 Cup Whipping cream
3 1/2 Tbs unsalted butter
1 tsp Sea or Kosher Salt

Combine water and sugar. Bring to a boil WITHOUT stirring. Continue to boil until mixture turn an amber color. The Darker the color, the thicker the caramel. Remove from heat and immediately whisk in cream and butter. Add salt. Continue to whisk until combined. Place into storage container and let cool. Store in fridge.
