1lb ground beef
3/4lb ground pork
1 sweet onion, finely diced
3 garlic cloves, minced
1/2 tsp ground black pepper
1/4 tsp nutmeg, grated
1/4 tsp all-spice
1/2 cup panko breadcrumbs
2 egg yolks
1/4 cup whole milk
Gravy
3 tbs unsalted butter
3 tbs all-purpose flour
2 cups beef broth
2 tbs soy sauce
1/2 cup heavy whipping cream
1 tsp dijon mustard (optional)
Mix the breadcrumbs and milk. Set aside. Saute the onions until soft. Set aside.
In the bowl of a stand mixer combine the bread and milk mixture, ground chuck, ground pork, egg yolks, 1 tsp salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
Make 1 ounce balls from the mixture.
Heat butter in pan and saute the meatballs until they are golden brown on all sides, about 7 to 10 minutes. Remove meatballs to an ovenproof dish and place into the warmed oven.
Lower heat in pan, melt some more butter, and add flour, and whisk until lightly browned, around 1 to 2 minutes. Gradually add the beef stock and whisk until the sauce begins to thicken. Add soy sauce and bring to light simmer for around 4-5 minutes. Add in whipping cream, simmer for 2 more minutes, stirring occasionally. Add the mustard if you are using.
