450g extra super firm tofu, cubed
1 large English cucumber, cubed
2 tbsp spicy chili crunch (Lao Gan Ma brand used)
2 tbsp sesame oil
2 scallions, finely chopped
Optional garnish:
fresh mint
Thai basil
crispy onions
romaine lettuce
Chop tofu and cucumber into cubes. Place cubes in bowl. Add spicy chili crunch, sesame oil, scallions, mint, and basil. Mix.
Serve on a bed of lettuce with GF crispy fried onions.
